AGEs: Advanced Glycation End-products
AGEs (Advanced Glycation End-products) are compounds formed by the spontaneous, non-enzymatic binding of reducing sugars to proteins, lipids, and DNA. They are major markers of biological aging and diabetic complications. The more sugar you consume, the more you age at a molecular level.
Mechanism of Formation
- Glucose or fructose + amine group (Lys, Arg) → Schiff base
- Amadori rearrangement (hours to days)
- Oxidation and dehydration → mature AGEs (days to years)
- Cross-linking of proteins, tissue deposits
Pathological Consequences
- Stiffening of collagens (skin, blood vessels, joints)
- Accelerated atherosclerosis
- Diabetic nephropathy
- Diabetic retinopathy
- Cataracts (glycated crystalline)
- Alzheimer's disease (glycated Aβ)
- Sarcopenia (glycated muscle collagen)
The Role of Dietary Sugar
The more sugar you consume (especially fructose, which is ~10× more glycating than glucose), the more AGEs you produce. A concentrated drink with 35g of sugar/100ml (GIMBER) significantly accelerates AGE formation — paradoxically contrary to a "health" objective.
