Why industrial smoothies are not what they seem

Free fructose vs fructose in fiber matrix
In a whole fruit, fructose is encapsulated in fibers (cellulose, pectin) which significantly slow down its absorption. In an industrial smoothie, these fibers are liquefied and the pectin broken down by heat:
- Intestinal absorption of fructose >3× faster than in whole fruit
- Overload of GLUT-5 transporter → unabsorbed fructose in the large intestine → fermentation → ginger bloating
- Massive fructose flux to the liver → activation of ChREBP → de novo lipogenesis → long-term fatty liver
