Industrial vs. Artisanal Kombucha: A Fundamental Difference
Artisanal, well-fermented kombucha is indeed an excellent health drink: live probiotics, organic acids (acetic, gluconic), tea polyphenols. But kombucha sold in supermarkets is very different:
- Pasteurization for shelf life → kills probiotics (the #1 benefit of kombucha)
- High residual sugar: fermentation stopped early to preserve the sweet taste the market prefers
- Added flavors to standardize taste
- Forced carbonation post-pasteurization for effervescence
Bottled pasteurized kombucha = a slightly sweet and acidic tea-flavored drink. Not much left of living artisanal kombucha.
Comparison of sugars: kombuchas vs. INTI
| Drink | Sugar/100ml | Live Probiotics | Functional Actives |
|---|---|---|---|
| GT's Kombucha Original | 4-6g | Yes (unpast.) | Tea Polyphenols |
| Remedy Kombucha | 0g (sweeteners) | Yes (unpast.) | Tea Polyphenols |
| Supermarket Kombuchas (past.) | 5-9g | No (pasteurized) | Minimal |
| INTI Ginger Elixir | <4g natural | Not applicable | Gingerols, shogaols, paradols |
INTI and kombucha: complementary, not competitors
A good unpasteurized artisanal kombucha and an INTI shot are complementary:
- Artisanal kombucha: live probiotics (Lactobacillus, Bifidobacterium), organic acids that lower intestinal pH, green/black tea polyphenols
- INTI: [6]-gingerol (systemic anti-inflammatory), shogaol (neuroprotection), paradol (thermogenesis), gastric prokinetic effect — none of these actives are present in kombucha
Optimal protocol: artisanal kombucha with meals (probiotics), INTI in the morning on an empty stomach (anti-inflammatory, digestive).
Industrial ginger kombucha: the worst option
Industrial "ginger" kombuchas (Gini Ginger, Booch & Brew Ginger) combine several problems:
- Pasteurized kombucha (no probiotics) + ginger flavor + high sugar
- The actual amount of active ginger is minimal
- They replace neither a real artisanal kombucha nor INTI
FAQ — Kombucha vs INTI
Can INTI and kombucha be combined on the same day? Yes — they are complementary drinks with different mechanisms. INTI in the morning + artisanal kombucha with meals is an excellent protocol.
Does INTI contain probiotics? No. INTI is not a fermented product — it is an artisanal ginger elixir. The active ingredients are the polyphenols and bioactive molecules of ginger, not probiotics.
Is homemade kombucha better than INTI? For probiotics, yes. For specific ginger actives (gingerols, shogaols), INTI is superior. Both have their place in a health routine.
